365 Days of Pictures Which Make Me Smile #8 (Post 1 of 2)

On a chilly evening when I want to relax .. there is just one thing for it.

A warm cup of hot chocolate!

Not just any hot chocolate will do for me though. My absolute favorite is Land of Lakes Mint Chocolate.

And then since I am probably lactose intolerant (not officially diagnosed ..) the perfect complement to the hot chocolate mix is Rice Dream.

Yum!

    I am not officially diagnosed either, but taking milk out of my life eradicated most of my digestion problems. Not all -- I can't eat beans, either.

    CB - I don't have it completely out of my life. I do still eat ice cream once in a while (and suffer the consequences - and no, no soy ice cream for me.) I'm actually thinking of working towards limiting all dairy/eggs eventually.

    Yum!!! I also limit milk, however I have almond milk. It is so common these days for people to not be able to tolerate cow's milk.

    Have you tried the other non-dairy ice creams? Ben & Jerry's is working on some vegan almond milk varieties to be released this year!

    VS - I like almond milk, but really prefer Rice Dream. I used to drink TONS of milk - even back in 2005/6 I was still drinking lots of it. Then it started not playing well with my digestive system ... I will drink it once in a great while, and will use it in cooked products (if NE is here...)

    Ceejay - No, I have to admit I haven't. I have heard about B&J's - might have to give them a try. Smile

    Doesn't the cocoa mix have dried milk in it? I've never found one that hasn't, but I've never seen that brand before, either. My daughter can't have cocoa mix because of the dried milk. We make hot chocolate from scratch. My daughter's version is one cup rice milk, 2 tbsp plain cocoa powder, and 2 tbsp sugar.

    There was a time when I thought maybe I was becoming lactose intolerant. You know what it turned out to be? A sensitivity to carrageenan, a thickening ingredient added to a lot of dairy products. Any product with milk or an imitation of milk (like non-dairy coffee creamer)--I read the label and look for carrageenan in it. This is another one of those, "Why can't simple foods just be simple foods." Ice cream seems to be the worst. There must be a lot of carrageenan in it. It's also very common in yogurt, sour cream, evaporated milk, puddings, nougat candies, creamy sald dressings, and even canned products! I know you don't eat meat, but I've seen carrageenan in canned ham. It's in some medicines, though I don't recall which.

    I make cocoa out of almond milk, sugar and cocoa powder (not the mix). It's good! You could add mint flavoring. For some reason, I can tolerate milk that is cooked or processed in some way -- for instance, yogurt is okay, cheese is okay, ice cream is sometimes okay (though I'm much safer with sherbet). It's drinking milk that really gets me.

    Joan - I don't think that's my issue. I'm okay with yogurt, and usually with cheese (unless I go overboard ...)

    CB - I think I'm the same - if the milk has been cooked or processed it doesn't seem to affect me in the same way. Ice cream ... yeah, can only eat that when I know I won't be around anyone for a day or so ... Smile

    If it does end up having milk powder in, you could experiment with making your own delicious version. Ghirardelli powder is vegan, and maybe you could stir it with a peppermint stick! Smile
