Easy and Healthy Oatmeal Cookies

I've been on a bit of a roll here today (and last Sunday too I guess.)

So far today I made the pancakes this morning, finally opened up my crockpot and started a sweet potato in it for dinner, finally opened up my rice steamer pot and put in some fresh asparagus to steam later, cut up a zucchini into thin slices and baked for ten minutes (didn't burn it!)

Then just a little bit ago I made these pretty good cookies!

You only need three ingredients:
1 cup rolled oats
1 ripe banana (the riper the better)
1/2 cup raisins or other dried fruit

Put all the ingredients in a bowl and mash the banana with your hands. This will take a few minutes to get everything mushed together.

Heat your oven to 350 and place round dollops of the "dough" on a cookie sheet. Bake for 15 minutes.

Makes 4 cookies.

You can make these without the raisins, but I think they wouldn't be quite as good. And they are good!

You can also make these in the microwave - heat for 30 to 60 seconds.

So easy peasy!

    Oh, I'm going to try this. Smile Hope my store has a ripe banana tomorrow. Do you think it makes a difference whether they are old fashioned rolled oats or 5 minute cooking rolled oats?

    I don't think so. I used old fashioned rolled oats, but I don't see why the 5 minute ones wouldn't work. Maybe reduce baking time?

    Next time I will let the oats soak up the moisture from the bananas longer, and I will flatten them a bit more. These are big. Just one would make a good breakfast.

    Joan - soaking a bit probably is a good idea. I didn't do that, but might next time. They do make for good sized cookies. Smile
